Backing up on Sunday we will be mixing a few spritzes and pouring from a short list at Capulus Espresso on Watchorn St, Hobart. Simple and delicious is our MO and today will be no different. Lily from Events With Audrey is producing the event and pouring wines from Giorgio de Maria. Giorgio himself will be on the pans, whipping up paninis, risotto and fresh Fico pasta.
Tonight we are popping up inside Night Mass at Dark Mofo with Phantom Spirits cocktails until 2130 and natural wine from Campbell Burton & Living Wines, Willie Smiths Wild Cider, & beefy pies until 2am (or 6am…)

The Cappellano Barolo Chinato is sublimely aromatic and refreshing, and at 18% abv it’s easy to enjoy a good couple of quaffs. I prefer a large serve over ice as a strong aperitif or a gentle digestive.
However Giorgio recently challenged me to make a mixed drink with it, so I came up with this for the popup at Monks & Co and I’m delighted to add this to my repertoire as it’s about to go onto high rotation.
