THE DEN COCKTAIL No. 2 || THE HILLS HAVE IRES
Here we bring you the second chapter in the ode to our residency at The Den during Dark Mofo this year. By popular demand, we bring you the extrapolated version of what was our best seller over three mad weeks - The Hills Have Ires.
This super fun and aromatic sour was conceived in partnership with tropical flavour lord and former croupier Guy Golding of The Den. THE HILLS HAVE IRES follows classic proportions and uses some of the cocktail worlds absolute best ingredients and, best of all, it's super simple to make at home too.
15ml Lemon Juice
15ml Winter Spice Syrup
How easy is that!?
Remember with an eggwhite drink to add all ingredients except the egg white, and give it a quick taste to make sure you're happy with the balance of flavours and sweet/sour ratio. Then add the egg white and give the whole thing a good shake (or blend!) to break down the goopy white and emulsify the cocktail - this is key to getting that real fluffy texture.
Finally, add a bunch of ice to the cocktail and shake it long and hard, before straining out into a chilled coupette glass.
At The Den we finished the drink with a cross painted on the cocktails foamy surface with Hibiscus Bitters and torched rosemary pegged to the glass. We loved the theatre and the double aromatics of these two ingredients which also really accentuated the flavours of the gin and other spices.
If you have neither at hand, shave a small piece of lemon zest over the top to add fresh aromatics and mask any remnant "egginess" that might otherwise spoil the herbal aromatics as the drink warms up.
This is a simply delicious killer of a drink that will shock and delight you and your guests year-round.
