Next stop in the European jaunt this month has been Säntis, the amazing Swiss Malt Whisky Distillery in Appenzell, a town at the foot of the Alpstein mountains.

Photos taken from our recent visit to the wonderful and hospitable lads at Argala. Pastis means 'a mess' or cloud, louche, haze, in Occitan, the native language of the guys in the valley. Enrico and Piero from Argala have mastered this anise-based aperitif after much trial and tasting. Nebla on the white label is the first batch of Pastis they made.

That is the maxim of Phantom Spirits; a Danish company specializing in cask finishes of rum from around Central America; and they are doing some seriously interesting experimentation.
